Second races would be Human, Charr, and Asura in that order. Humans worship Grenth. Charr fight ghosts on a daily basis so most bands of charr military know how to combat the dead and implement necromancy into their combat. Asura necromancer seem to be pretty rare.

They can have more than one profession, but in the time of Guild Wars 2 they prefer to excel at one rather than split their skill between multiple as was done in GW1. From your description, I suggest trying Elementalist or Mesmer. Practically, race matters very little.
